does anyone have an idea what would be the best way to retroactivaley generate performance metrics using the logfiles? I would like to be able to check for example if in a certain time range there were binds or searches that took longer than usual.

logconv.pl (that ships with 389) can do this for you. You would want to use one of these options to create a CSV file:
-m, --reportFileSecs <CSV output file - per second stats> -M, --reportFileMins <CSV output file - per minute stats>
Example:
logconv.pl -M log-minute-stats-csv.out /logs/access*
