I've been trying/struggling and failing a lot to get a working installation of Fedora Server onto a couple of SBCs and figured now is the time to ask for help. I have two NanoPi K2s (http://wiki.friendlyarm.com/wiki/index.php/NanoPi_K2) and one ASUS Tinker Board (https://www.asus.com/us/Single-Board-Computer/Tinker-Board/) that work fine with the vendor's images of debian variants, but I can't for the life of me seem to get Fedora working. I've kind of figured out that it is probably u-boot related issues that are preventing the flash of the SD cards from booting, but the random stuff I've tried from the documentation in the Wiki and from assorted places online hasn't yielded success.
I'm really hoping someone on this list can help or at least point me in a new direction, and if there are any fellow Red Hatters that work in the Tower that are willing to help I would be happy to bring the devices to work with me if hands-on would make it easier.

Well saying something isn't working is like telling a doctor that your sick and not telling him whether your head hurts or you've accidentally cut your foot off ;-)
That said you've not chosen a good pair of boards.
The NanoPi K2 had no upstream support in either u-boot or the kernel, the Actions S90x series of SoCs are just starting to gain support upstream with the only board I see there in 4.16 being the 96boards Bubblegum and that support is rudimentary with enough to boot it via serial console but there's no storage (MMC or USB) or network support. I suspect that'll improve in the coming year with at least some focus.
The Tinker board should be a better one, I don't have one but I do have the firefly based on the same chipset. There's been some issues with the kernel locking up part way through boot and I need some time to debug this but overall we should be able to get this one working, do you have a serial console for it or are you using HDMI. Provide details of what you're doing for this one, image you're using etc and we'll see if we can't get you further along there and work out the issues.
