Hi,
I've tried to configure copr repositories directly with yum but there is
no yum-plugin-copr in EPEL-7.

IIRC Valentina created and maintains this plugin. I guess that no one was interested in.
Please file bugzilla report
against yum-plugin-copr and ask for EPEL7 build.

I found yum-plugin-copr here: https://copr.fedorainfracloud.org/coprs/a
lonid/yum-plugin-copr/ don't know if it works
but also we don't have dnf-plugin-copr, i.e. on epel7 mock chroot, I
can't use dnf copr command :
dnf copr enable flkdfl
No such command: copr. Please use /usr/bin/dnf --help
It could be a DNF plugin command.
