WebUI:
Packages -> [select package] -> Build Source, hit the edit button -> 4. Generic package setup -> Max number of builds

CLI:
usage: copr edit-package-scm ...snip...
                             --name PKGNAME
                             [--max-builds MAX_BUILDS]
                             copr

Oh, nice. I didn't look there because I don't have package build sources set up. I'll try it out :) Thanks!
