I just learned about the awesome "lilo -R" command. The man page says:
-R command line
This option sets the default command for the boot loader the next
time it executes. The boot loader will then erase this line: this is
a once-only command. It is typically used in reboot scripts, just
before calling ‘shutdown -r’.
This allows you to test new kernels on remote servers, and it will
revert back to the lilo.conf default during the next boot. A regular
reboot, remote power cycle, or passing 'panic=10' kernel option which
reboots upon panic would fallback to the previous default.
Does GRUB have anything similar to lilo's -R? This is a totally useful
function and I would really like to avoid using lilo.
If this functionality is truly missing from GRUB then this is another
project for me.

Yes grub has the "--once" option to savedefault:
savedefault --default=N --once
used in the grub shell.

a commandline wrapper to do that might be nice, but the basic functionality
is there already

redhat's grub has a patch that implements (but doesn't document)
the --once option to the savedefault command.
Note there is a problem with the "savedefault --once" functionality
I think. The default entry and "once only entry" are not independent,
and so after a "once only boot" the default entry will be reset to 0.
I can't see how that would ever be required (especially
if the "once only entry" is also 0).
I've modified the patch to make these independent so you
don't loose your previous default entry.

Scan the grub spec changelog for the savedefault --once "hack".

I know at the GRUB bootscreen, you can press 'e' and modify the parameters
for a one time only type of thing if thats what you mean. Then you just
press 'b' to boot using those settings

That requires intervention in the boot process. 'lilo -R' sets a one
time default before you shutdown. That allows remote testing where you
don't have access to the console at boot. If the kernel fails it can be
rebooted automatically (or any lunk can hit reset) and it gets the old
default next boot.
The --once option is a start, but now where near as easy to use yet.
A wrapper or something else is needed. perhaps integrating it into
reboot (instead of it being a symlink to halt) would work? So 'reboot -d
<label>' would detect lilo/grub and perform the correct operation to
make it a one time default. I actually did that back around RHL6.1, a
script to reboot using a give label with lilo (no grub yet).
