Can unison240 be named to just unison (and overwrite the existing unison) ?

No it can not be for several reasons:
1) We do not over-write existing applications.
2) Unison is very version dependent to work with other unison versions. 
 
Can unison(240) please be build for EL5 64-bit ?
 

It will be up to a packager who wants to support it and what kinds of headaches it would cause to make it so.
