Is there a way to make a shortcut for setting the screen config when I connect a 2nd screen? Or, a way to make a shortcut to bring up the screen config dialog?

System Settings -> Workspace -> Shortcuts -> Custom Shortcuts
Then:
Edit -> New -> Global Shortcut -> Command/URL
Name the shortcut and then fill in Action with kcmshell5 kcm_kscreen and Trigger with the keyboard shortcut you want.
