I got the video files with audio playing in gstreamer today, thankfully. I'm going to run a trial test with more audio since the test file I used has audio that is too quiet, and if that goes well we should be set for running usability tests of Fedora Community this week.

Turned out there was an issue with the mic last week and I didn't get a chance to resolve it - it just isn't picking up much of anything. I'm not sure if it's the weird bare wire connection or what. I'm in RDU this week so I don't have the equipment to work with this week, but will hopefully iron it out next week.
Sorry for all the delay :(

It's not the mic, since I just tested it with my laptop and it seems to work fine. So it's something with the weirdo connector on the back of the DVR. :(

I tried every combinatoric possible of single or double wire into the unit, and of course it was the last one that ended up working. :) The sound is much better now, no distortion or humming, although I may give it a little bit of a boost using gstreamer as well. Now that I have a file with working audio, I'll get the gstreamer pipeline to include that in the final videos tonight and will hopefully be ready for some test runs tomorrow!
