if adding fields to freeipa is complicated, would you recommend adding those fields to
LDAP, then retrieving them with ipa using --all?

Yes but it is often non-trivial. It can be achieved with a server-side
plugin but basic understanding of LDAP is necessary.

Adding --all --raw to a show or find command will return all
non-operational attributes. There is no way to return those unless IPA
already handles it (e.g. nsaccountlock).
What do you want to do with createTimestamp?
