I'm working on text in the Fedora Security Guide discussing GRUB. There is a sentence that reads "[Fedora] ships with the GRUB boot loader on the x86 platform." and I am curious as to how true that is. Do we not use GRUB on any other platform?

Well, those are all the primary platforms...
For secondary arches grub2 is also used on PowerPC. It is presumably possible that some future ARM systems might use grub2 at some point, but we don't currently use that.

Most ARM systems use U-boot. PPC64 uses yaboot. I don't know what s390x uses.

ppc64 moved to grub2 for disk boots and still uses yaboot for DVD
s390(x) uses zipl

However all future 64-bit ARM (AArch64) systems will use GRUB2.
