Actually, I'm also able to configure the printe on GNOME, but only if I
specify the IP address of the printer. It doesn't ask to select the
printer driver, it is detected automaticalyy.
Only "automatic discovery" lead to a non working printer (as described
before) and to issues with GNOME settings. And also:

Bug 1868141 and 1812515 look similar, yes, but I'm not sure they
