http://kb.mozillazine.org/Bad_Eyesight_-_Thunderbird
http://kb.mozillazine.org/White_on_black_-_Thunderbird
unfortunately, 'white on black' does not mention quoted bar and text.

read above links.
open thunderbird, make these changes to thunderbird's "about:config";
browser.display.background_color #000000
browser.display.foreground_color #FFFFFF
browser.display.focus_text_color #FFFFFF
editor.background_color #FFFFFF
messagecompose.background_color #000000
msgcompose.text_color #FFFFFF
close thunderbird.
to change colors for 'quoted text', check for a file;
/home/bob/.thunderbird/xxxxxxxx.default/chrome/userContent.css
if present, add below. if not, create and add below;
/* replace colored bars with ">" */
.moz-text-plain blockquote[type=cite] {color: white;}
{border: none !important; padding: 0 !important;}
/* Quoted text in plain-text replies */
span[_moz_quote=true] {color: white;}
save file.
open thunderbird, do you now have white on black for emails being
read, composed, and replied to.
