Take a look at zoneminder (
www.zoneminder.com). There's lots of IP cameras available
and zoneminder will use many of them with very little hassle. I've had good luck with
cameras from GrandStream, 1080p, night vision, power over ethernet support. The camera
itself wants a Windows directx in order to view streams directly, but if you ignore that
and access through zoneminder they work very nicely.

I've just been informed of an issue at my family's business in Ohio.
They are being targeted by some local hoodlums, and are looking for a
security camera system.
The business runs Linux on all office equipment, so I was hoping there
was a Linux security solution that can use IP cameras for recording. Is
anyone using a setup like this? What do you use, and how do you like it?
